Ingredients
  

  • For the Veggie Patties
  • 1 can (15 oz) black beans or chickpeas, drained and rinsed
  • 1/2 cup cooked quinoa or oats
  • 1/2 cup grated carrot
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1/4 cup breadcrumbs
  • For Assembling the Burger
  • 4 burger buns
  • 1 ripe avocado, sliced or mashed
  • Dill pickle slices
  • Lettuce leaves
  • Tomato slices (optional)

Instructions
 

  • In a skillet, heat olive oil over medium heat and sauté the onion for 3–4 minutes until softened. Add garlic and cook for 30 seconds.
  • In a large bowl, mash the black beans or chickpeas until mostly smooth with some texture remaining.
  • Add cooked quinoa or oats, grated carrot, sautéed onion and garlic, spices, salt, and pepper.
  • Stir in breadcrumbs until the mixture holds together.
  • Shape the mixture into four equal patties.
  • Heat a lightly oiled skillet over medium heat.
  • Cook patties for 4–5 minutes per side until golden brown and firm.
  • Lightly toast the burger buns if desired.
  • Assemble burgers with lettuce, veggie patty, avocado, pickles, and tomato if using.
  • Serve immediately.
