Ingredients
  

  • For the Salad:
  • 4 cups watermelon, cubed (seedless preferred)
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves, roughly chopped
  • ¼ small red onion, thinly sliced (optional, for a savory twist)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lime juice (or lemon juice)
  • Freshly ground black pepper, to taste
  • A pinch of sea salt (optional, as feta is already salty)
  • Optional Garnish:
  • Lime zest
  • Balsamic glaze drizzle
  • A few microgreens or basil leaves

Instructions
 

  • Step 1: Prepare the Ingredients : Cube the watermelon into bite-sized pieces and remove any seeds. Thinly slice the red onion (if using). Wash and chop the mint leaves gently to release their aroma. Crumble the feta cheese and set aside.
  • Step 2: Assemble the Salad : In a large mixing bowl, add the watermelon cubes, mint leaves, and sliced onion. Drizzle with olive oil and lime juice. gently toss to coat all the ingredients evenly.
  • Step 3: Add the Feta : Sprinkle crumbled feta cheese over the top. Toss lightly once more to distribute the feta without crushing the watermelon.
  • Step 4: Season and Garnish : Add freshly cracked black pepper and a pinch of sea salt if desired. Garnish with lime zest, extra mint leaves, or a light drizzle of balsamic glaze for added contrast.
  • Step 5: Chill and Serve : Serve immediately or refrigerate for 15 minutes before serving to enhance the flavors.
