Ingredients
For the Chili:
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 cans (4 oz each) diced green chiles
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon dried oregano
¼ teaspoon cayenne pepper (optional, for heat)
Salt and black pepper, to taste
4 cups chicken broth (low-sodium preferred)
2 cans (15 oz each) white beans (such as cannellini or great northern), drained and rinsed
3 cups cooked chicken breast, shredded (rotisserie chicken works great)
1 cup frozen or canned corn (optional)
½ cup sour cream (or Greek yogurt for lighter option)
½ cup heavy cream or half-and-half
Juice of 1 lime
For Garnish:
Fresh cilantro, chopped
Shredded Monterey Jack or Pepper Jack cheese
Avocado slices
Crushed tortilla chips or strips
Instructions
Prep ingredients: Dice onion, mince garlic, shred chicken.
Sauté base: Cook onion in olive oil, then add garlic and spices for aroma.
Add broth u0026 beans: Stir in chicken broth and white beans, mash some beans to thicken.
