Ingredients

  • ¼ teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • 4 cups chicken broth (low-sodium preferred)
  • 2 cans (15 oz each) white beans (such as cannellini or great northern), drained and rinsed
  • 3 cups cooked chicken breast, shredded (rotisserie chicken works great)
  • 1 cup frozen or canned corn (optional)
  • ½ cup sour cream (or Greek yogurt for lighter option)
  • ½ cup heavy cream or half-and-half
  • Juice of 1 lime
  • For Garnish:
  • Fresh cilantro, chopped
  • Shredded Monterey Jack or Pepper Jack cheese
  • Avocado slices
  • Crushed tortilla chips or strips

  • Prep ingredients: Dice onion, mince garlic, shred chicken.
  • Sauté base: Cook onion in olive oil, then add garlic and spices for aroma.
